Braised Pork

Ingredients: 4 people
gr. 800 of lean meat in beef leg
gr. 50 gr of bacon
. 50
of butter, a dash of brandy
flour
For the marinade: A bottle of Barolo

the leaves of a sprig of rosemary 3 cloves

a pinch of thyme, a clove of garlic

leaf laurel
a piece of cinnamon
3 peppercorns collected in a gauze bag
Preparation:
dress the meat with a few strips of bacon, put it in a bowl with the vegetables cut into small pieces and the bag with herbs and spices, pour in the Barolo wine, cover with a dish and marinate (about a day), covered in a cool place (not refrigerator), stirring occasionally.
In a saucepan, fry the remaining chopped bacon in butter, then brown the meat lightly floured and drained, pour all the marinade and bring to a boil, after about ten minutes remove the bag of spices, salt, cover and finish the cooking over low heat.
Then remove the meat and keep warm, strain the sauce into a blender, put it back on the fire, addensatelo, adjust it with salt and sprinkle with brandy.
After a few minutes to boil pour over sliced \u200b\u200bmeat and serve with polenta or mashed potatoes.
